Banana bread

Ingredients
 
500g over ripe banana’s
150ml oil
500g castor sugar
500g flour
4 eggs beaten
10ml baking powder
150ml milk
5ml vanilla essence
Pinch of salt
5ml bi-carb
 
Method
 
Mash bananas, sugar and salt together.
Beat in eggs, combine milk and oil.
Add to banana mixture stirring constantly.
Sift in flour, baking powder and bi-carb.
Add vanilla essence.
Pour into 2 x 1 Kg loaf tins and bake at 180 degrees Celcius for 45 to 60 minutes or until skewer comes out clean.
Remove from oven, allow to stand for 5 minutes before turning out.
