Lemon curd

Ingredients

1 cup sugar
2 well beaten eggs
60g butter
rind and juice of 2 lemons

Method

Mix all the ingredients together and put into a double boiler.
Stir until thick and creamy over low heat.

DO NOT BOIL.

Take about 20 minutes.
Bottle in glass jars and cover when cold.
Makes 500ml.
