Here is a healthier alternative than sugary biscuits and cookies that will satisfy your sweet craving. These date bars are a no-bake recipe and can be made in just a few minutes.
The combination of peanut butter, coconut and cocoa is a real winner. You don’t need to add any additional sugar as the dates are a natural sweetener.
These date bars are not only good for you they are super easy to make.
2 cup dates, pitted
¾ cup cashew nuts
¼ cup peanut butter, all-natural
½ cup coconut flakes
2 tablespoon cocoa powder, unsweetened
1 pinch salt
1.Toss everything into a food processor and process until the mixture starts to go smooth and clump into a ball. The dates will be all chopped up but you’ll still have bits of nuts.
2.Turn the mixture out into an 8 or 9 inch square dish lined with baking paper. Use your hands to firmly press the mixture into the bottom of the dish.
3.Cover and refrigerate for 30 minutes.
4.Remove the bars from the pan and cut into pieces using a sharp knife. Enjoy these bars cold or frozen. Store in an air-tight container in the fridge or freezer.
