Stuffed Chicken Breasts With Cream Cheese, Tomatoes And Bacon
Perfect for the braai, oven or air-fryer. These stuffed chicken breasts are simply succulent and full of flavour.
2 Chicken Breasts
2 tbs Cream cheese (1 tablespoon for each breast)
Cherry tomatoes (2 sliced in half for each breast)
4 Slices of bacon (2 for each breast)
1.Slice the breasts straight down the middle, without piercing the back, to create a funnel to add the cheese and tomatoes.
2.Add the cream cheese and tomatoes to the breast by sliding them into the funnel.
3.Next place the bacon under the breasts and wrap them around the chicken and secure them with toothpicks. *toothpicks are important as they keep the chicken together….keep a few for braai time just in case the bacon shrinks a bit.
1.Cook chicken breasts on medium to high heat, which I calculate as putting my hand above the grid for about 5-8 seconds without needing to remove it.
2.It will take about 15 – 20 minutes to cook the chicken, so throw it on and flip it about four times or so. Just remember to make sure to check that the toothpicks and bacon stay in place.
3.To check if it’s done, I normally just cut through the thickest part of the chicken breast, and if it’s white, then it’s ready to eat.
