1 cup butter
1 cup semolina
1 cup caster sugar
4 teaspoons baking powder
1 teaspoon grated orange rind
1 teaspoon ground cinnamon
1\2 cup milk
1 cup flour
2 cups coarsely ground walnuts
Ingredients for syrup
2 cups sugar
4 cups water
juice from 1\2 a lemon
Boil all the ingredients for the syrup together for 5 minutes.
cream butter and sugar until light.
Add orange rind and egg yorks and beat well.
Sift four, semolina, baking powder and cinnomon, and add to the creamed mixture alternatively with milk.
Add the walnuts and mix gently.
Beat the egg whites until stiff and fold into the batter.
Pour into a greased pan and bake at 180 degrees Celcius for 45 minutes or until cake is cooked when tested.
Remove from the oven and pour cooled syrup over hot cake.
When cold cut into squares, lift out onto a serving platter with a pallet knife.
