Yoghurt crumpets

60ml castor sugar
2 extra large eggs
15ml oil
400ml self raising flour
125ml thick plain yoghurt or 250ml milk
100g cottage cheese
Beat sugar, eggs, oil and flour into a smooth batter.
Add yoghurt.
Cook in a non-stick frying pan until bubbles appear turn over and cook on the other side.
Serve with :cottage cheese, butter and honey, and crispy bacon.
